Friands originate from Australia and once you have tried them you will be converted. This recipe is for plain lemon Friands which are delicious served with summer berries and clotted cream.

I have used a Friand pan which is a 12 hole oval shaped muffin tin. They are available in the shop but you can use a normal muffin tin with cases.

You will need...

  • 200g 7ozs Lurpak [or alternative]

  • 250g 9ozs Icing Sugar

  • 50g 2ozs Gluten-free Plain Flour

  • 1tsp Xanthan Gum

  • 175g 6ozs Ground Almonds

  • 6 Egg Whites

  • Grated Zest of 2 Lemons

  • Icing Sugar for Dustin

The preparation time is 25 minutes, baking 20 minutes and cooling 35 minutes.

Preheat the oven to 180C [Fan] or Gas Mark 6. This is hot but it will not dry out or burn the cakes.

Melt the Lurpak in a heavy-based saucepan over a gentle heat and set aside to cool.

Sift the icing sugar, flour and xanthan gum into a mixing bowl. Add the almonds and mix in with a knife or your fingers.

In another bowl, whisk the eggs whites until stiff with peaks.

Make a well in the centre of the dry ingredients, gently pour in the egg whites and add the lemon zest. You can use some lemon extract as an alternative. Gradually stir in the melted butter to form a soft batter. You do not want to over-mix the batter.

Divide the batter among the holes or cases.

Bake for 15 to 20 minutes or until golden brown and firm to the touch. Remove from the oven and leave to cool for 5 minutes before turning out on a cooling rack.

Dust with icing sugar to serve.

Tip: before baking, you could add some blueberries to each cake. Just place some on top the batter when in the cases or muffin hole.

You might think …….. I have six egg yolks to use up. If you cook the Friands before breakfast you could create a breakfast with a difference.

I have used an individual square muffin tin but there is no reason why you can’t use a normal round one. Use some good quality ham and line one of the holes with one slice. Try to make sure the hole is totally covered so that the egg does not run through.

Beat the egg yolks and spoon into the ‘ham cup’ that has been formed. Add some cheddar cheese and herbs with black pepper, and bake in the oven for about 15 minutes.
